Easy Peasy Weeknight Meal For The Whole Family


As the leaves start to change and the air becomes crisp, it’s the perfect time to embrace the cozy flavors of fall. From hearty soups to sweet treats, there’s no shortage of delicious recipes to try during this season. Whether you’re hosting a gathering or simply looking to enjoy a comforting meal at home, these fall recipes are easy and sure to delight your taste buds 🍽️😋

Now, I am no chef by any means necessary! I am just a mom and wife trying to feed her family delicious and healthy food. My husband and I decided to go vegan after watching several documentaries about the health and environmental benefits of a plant-based diet. It was a big change for us, but we started experimenting with new recipes and exploring different plant-based food options. Over time, we both noticed positive changes in our health and energy levels. It’s been a journey of learning and adapting, but we’re both happy with our decision to embrace a somewhat, vegan lifestyle as we don’t eat as much meat as we used to.

I love to experiment with new and different ideas for dinner and sometimes, I always amaze myself. One fall recipe that impresses me is yummy golden potatoes with butter curry sauce! The rich, velvety texture and warm, earthy flavors make it a comforting choice for chilly autumn days. Add onions, and red and orange peppers to give it a sweet kick and a boost in flavor (Also makes for a pop of color with the autumn season). Pair it with a crusty slice of Italian loaf bread for a satisfying dinner that’s simple and elegant.

Ingredients

These are the exact ingredients I use to make my dish. This recipe feeds my family of five, but feel free to adjust the ingredients to fit your family’s size and use any seasonings you prefer.

  • 5 Golden Yukon Potatoes (cut in fours)
  • 1/2 Yellow Onion
  • 1 Sweet red pepper
  • 1 Orange pepper
  • 1 tbsp Olive oil
  • 2 cups Vegetable broth
  • 1 tsp Cilantro
  • 1 tbsp Garlic powder (or salt)
  • 1/4 teaspoon pepper
  • 1/4 cup water
  • 2 tbsp cornstarch (to thicken sauce)
  • 1/2 cup Burman’s Butter Chicken Curry Sauce
  • Slice of Italian loaf bread (optional)

Instructions

Prep time: 10 minutes

Cook time: about 30 minutes or less

Servings: 5

  • Heat olive oil in a medium-sized pot for a few seconds and then add the onion. Sauté for about 3 mins stirring every few mins.
  • Add the red and orange peppers then stir and cook for about 6 mins.
  • Add potatoes, garlic powder (salt) and pepper then stir until the veggies are coated. cook for about 2 mins.
  • Add Burman’s sauce and stir to coat all veggies. then add vegetable broth and cook on high/medium heat until boiling.
  • Boil potatoes for about 15/20 mins until soft.
  • When the potatoes are fully cooked add the 2 tbsp cornstarch and 1/4 cup water mixture to the pot and stir until the sauce turns thick. *you can add more water/vegetable broth to lessen the thickness*
  • Add Cilantro and serve! 😋

Butter Chicken Curry Pasta

I love pasta! It is one of my favorite dishes. And I’m always trying different ways to make a hearty dish with them. Pasta with curry sauce is a delightful combination of Italian and Indian flavors. The al dente pasta pairs perfectly with the creamy and aromatic curry sauce, creating a comforting and exotic dish. The rich curry sauce coats each piece of pasta, delivering a fusion of flavors with every bite. The combination of these two culinary traditions results in a dish that is truly unique and satisfying. Whether you prefer a mild or spicy curry, you can customize this dish to suit your taste. This makes it a versatile and delicious meal option.

Sometimes I like to mix different pastas. It depends on the cooking time of each type of pasta so be mindful if you decide to do so.

Ingredients

  • 1 cup Pasta of your choice
  • 1 tsp Olive oil
  • Salt
  • 6 cups water
  • 1/2 Burman’s curry sauce
  • Parsley
  • Parmesan (optional)
  • 1/4 cup any spaghetti sauce (optional)

Instructions

Cook time: 10 mins

Servings: 5

  • Boil water in a medium-sized pot over high heat and add salt and olive oil. The oil keeps the noodles from sticking together.
  • Cook pasta according to instructions on pack/box.
  • Drain pasta and add 1/2 curry sauce. Mix well until pasta is coated and sprinkle on the parsley and parmesan for the finishing touches.
  • Serve and enjoy! 😋

*The noodles can get a little dry so what I like to do is add a little bit more olive oil and a little bit of spaghetti sauce*
