Traditionally, this soup is made without tomatoes. But I love to add new things to recipes that I make, just to give them some individuality. So today this was my first time making this soup with tomatoes and It turned out lovely! (chefs kiss!)💋

Ingredients
Let’s keep it real—everything here is pantry accessible. No need to hunt for herbs you can’t pronounce or expensive, exotic beans (maybe cannellini can be challenging)🤔

Serves 4
- 1 16 oz can white beans (cannellini , navy, or great northern beans)
- 2 tbsp olive oil (or butter)
- 1 tbsp garlic
- 1/2 onion (chopped)
- 2 carrots (chopped)
- 2 celery sticks (chopped)
- Handful of fresh spinach
- 6 cups vegetable broth (or any broth you prefer)
- Herbs and spices: garlic powder (or salt), pepper, ginger, cumin, rosemary or thyme, maybe a dash of smoked paprika if you’re feeling wild
- 1 cup egg noodles
- 1 14.5 oz can diced tomatoes
- 1 14.5 oz can crushed tomatoes
- 1 14.5 oz can tomato sauce (optional)
*Seasonings, herbs and spices can be used to your preference*
Instructions
- Heat up olive oil in your pot. Toss in the onion and let cook until translucent.
- Add in the carrots and celery and let cook for about 3 minutes. Stir occasionally.
- Sprinkle in the garlic, seasonings, herbs and spices. Mix well until fragrant.
- Pour in the white beans, diced tomatoes, crushed tomatoes, tomato sauce, and your broth of choice. Mix and let simmer for about 10 minutes so the flavors can really meld.
- Add the egg noodles and broth to the pot and stir. Cover the Instant pot and set valve to seal.
- Pressure cook on high for 6 minutes. Once it’s done, set valve to steam release and let sit for 3 minutes. Open lid and add in spinach, stir.
- Top it off with basil. Serve and Enjoy!
